This issue was reintroduced in MacOS update Ventura. The team ran into another issue while implementing the workaround suggested by Apple. While the team revisits this issue, users can use workaround this issues by paste through context menu. Thank you all for the patience.

You can copy text from Illustrator, paste it in Notepad, and then re-copy and paste it back to the Save-As window, but that is still a workaround.
You still are unable to copy/paste text from within the app.
An error occurred while saving the comment Jimmy commentedJust to piggyback this issue, the copy/paste has been broken for numerous versions in one other key way. Previously we are unable to copy/paste text from Illustrator files and paste it in the Save-as window. This should also be addressed, as the notepad copy/paste has already been a workaround for something that should work like other Adobe apps.
Not sure if this is a Windows issue as well, but this has been something I have had to workaround the past few years on Mac with Illustrator CC.

This issue has existed for years and I'd like to know if it can be fixed. When copying text from your document, it should remain on the clipboard so that it can be pasted when the Save As window first loads and prompts you to name to the file. However, pasting does not work from text copied from Illustrator. For years I have had to first copy this text, paste it into TextEdit as plain text ideally and then paste the text from TextEdit back into Illustrator once I have the Save window open. There are other workarounds but this is the quickest option I have found.
The most practical use of this feature is saving filenames stored within the document, such as a project or proof spec. sheet that lists the filename you want to end up using when you're ready to save the file. To turn this bug into a feature it would be great if this could be automated as well. I believe a plugin may be better suited for this type of automation currently though.
Copying and pasting text in Illustrator seems to be flawed and other apps such as Adobe Photoshop CC appear to handle this task properly. When I copy text from Photoshop I can paste it directly into the Save As window without any issue.

I am happy to share that we have fixed this bug in our latest release – 27.1.1 which is available worldwide now.
Going forward, our goal is to fix as many top User-Voice bugs as possible and as frequently as possible. Given the nature of the fixes, some of the bugs will take a longer time to fix, but we are on it.

General slowness on using Illustrator on Mac is one of the major issues reported in this thread. Illustrator team made significant progress in replacing Illustrator’s GPU rendering engine from OpenGL to macOS Native Metal Rendering Engine – https://developer.apple.com/metal/.
We have observed common operations like Zoom, Pan, and rendering operations are now smoother in cases where it was sluggish as reported in this thread. We urge Mac users to try the Illustrator Beta build with Metal support and share your feedback.

It seems Illustator struggles to perform well when rendering on higher resolution displays. The issue is exaggerated using Overprint preview with complex files.
An error occurred while saving the comment Jimmy commentedI'm also finding the current version almost unusable and it keeps hanging on me. Illustrator's performance continues to get worse with each new release.
I've already been previously experiencing white screen flickering that can only be resolved by restarting. With the latest Illustrator upgrade performance is now terrible. The last 2 Illustrator updates have made the software hang far more with more complex files with plenty of outlined text or nodes/anchors in the file.
The more and more troubleshooting I do with Illustrator the more it appears there is a hardware compatibility issue here. Current and previous versions run much better on machines with lesser hardware specs. Illustrator 2018 runs better but the UI is tiny in comparison to the 2019 version with UI scaling bumped up.

UI Scaling is now set to line 2/4The white flickering is a separate issue that could be related. If you're finding this version of Illustrator unusable my only tip is to try downloading the latest 2018 release using the Adobe CC app.
I'll have to followup with both Adobe and Apple support again. Paying monthly/annually for apps with updates that only make the software less optimized is extremely frustrating.

Would be nice to see more focus on bugs, performance issues and optimization instead of new features. These performance issues really limit how someone can utilize Illustrator.

An error occurred while saving the comment Jimmy commentedI've noticed the same issue lately as well. Whether I manually zoom in to an area or specifically set the zoom above 670% the entire screen goes grey. 671% appears to trigger this on my setup.
Currently I have GPU Performance enabled. When I re-enable Animated zoom the issue appears at a different level (709%).

A current 'workaround' is to disable Transform Tools option in Preferences > Smart Guides. This removes the 'uniform' guide, making the smart guides less useful, but it stops it from jittering.

An error occurred while saving the comment Jimmy commentedDefinitely been an issue for at least a few years. Please provide an option to disable scrolling through all fields in Illustrator windows or no longer make this the default action when you hover your mouse about a field. Just the slightest movement of your index finger will start scrolling through numbers.
This is really problematic when you are clicking to type in a field to change the unit to another value. For example: if I type in a new height value for a selected object and then hit enter on the keyboard the cursor disappears. So if your next movement is to move the mouse and you scroll just the slightest bit, the values start to rapidly scroll up or down depending on which way you slightly moved your finger. When you are doing critical size adjustments or distortion this is annoying and sometimes subtle enough where you don't see the issue occur.

The bug will be fixed when PS is upgraded to the latest version 22.3.1 . Kindly update PS to 22.3.1 and Bridge to the latest version. If the issue still happens, kindly reset your Settings in both PS and Bridge.

Kind of crazy this is something that wasn't fixed a week after the issue was discovered.
I've continued to copy text out of Illustrator to TextEdit and then paste it into the save as prompt. As for using a context menu, if you are referring to right-clicking this doesn't work for me. Windows works fine with CTRL-C and CTRL-V (feels amazing to perform such a simple task there too).
