Color Settings Auto Defaulting
When you open up a file in the new Illustrator 2019 it automatically defaults your document to have "Emulate Adobe Illustrator 6.0". You can change your color settings to what you want, in my case I use "North American General Purpose 2". But when you click into a different application, ex. Internet, Photoshop, anything; your file changes your color setting back to "Emulate Adobe Illustrator 6.0". This is extremely frustrating and annoying. Please fix.
We have a fix available and you should not have this issue if you have the following version of these Creative Cloud applications
Please update to:
- Illustrator (23.0.1)
- Photoshop (20.0.1)
- InDesign (14.0.1)
- Bridge (9.0.1)
Please refer below for an issue with recent version 25.2.1 – https://illustrator.uservoice.com/forums/601447-illustrator-desktop-bugs/suggestions/42892902-illustrator-v25-2-1-color-profile-keeps-changing-t

Colors are not true to actual shades/hues. You'll see one color in the color picker, but then in the color swatch you'll see a completely different shade, even when you insert a specific color code.

Same frustrating problem!
Uninstalling Bridge didn't help, nor the new update of it.

This is a frustrating "development," but I did stumble across a solution (by johngettler1) for the time being that has helped our team.
1. If you use an Adobe supplied Color Settings preset, go to next step, otherwise use Photoshop Color Settings, to create your desired color settings, and then Save a named Preset.
2. Quit all Adobe apps
3. Hold down the Option key, and choose the Go Menu.
4. Chose Library.
5. Go to Preferences/Adobe/Color
6. Delete this file: ACEConfigCache2.lst
7. Go into Bridge 2018 (or 2019 if you have already deleted Bridge 2018), and go to Edit, Color Settings, and chose your desired preset, and click Apply. If done in Bridge 2018, you don't need to do it in Bridge 2019.
8. Quit Bridge, and now all your 2018 and 2019 apps will be "Synchronized" and will not revert back to the factory defaults!

Adding my vote here as well. I'm on Mac, High-Sierra, and been experiencing this issue on AI since I updated to CC 2019. So annoying and bothering. Please Adobe Dev team, fix this and release a new update hopefully soon. Thank you.

Just now I got a new message. "The embedded color profile in this document will be discarded, because your Color Settings are configured for Adobe Illustrator 6.0 compatible color management." Has Adobe ever responded to acknowledge this issue? Wondering how long we have to wait for a fix.

SAME? InDesign reverts back to "Emulate Adobe InDesign 2.0 CMS Off", and Illustrator reverts back to "Emulate Illustrator 6" every time I switch applications to Photoshop (I can switch to other non-Adobe apps without the problem).
I have deleted the ACEConfigCache2.lst preference file, which seems to have stopped existing files from opening with the incorrect color settings. But they revert as soon as I use Photoshop.

If you are experiencing this issue still look through the older comments for the tip on moving/deleting the ACEConfigCache2.lst preference file. A temporary workaround, but beats putting up with this issue every time you load a file.

Same Problem. I have uninstalled and reinstalled Illustrator with no change. My color settings continue to revert to "Emulate Adobe Illustrator 6.0" Every time I switch from one program to the next, BOTH Indesign and Illustrator "default" back to "Emulate Adobe Illustrator 6.0." Photoshop remains constant, holding my color settings, thankfully. BUT, Illustrator and Indesign are the big issue.
The strange thing is, the designer next to me has updated his programs just like I did and he is having no issues at all. The inconsistency of this problem is baffling. -
