Check all the methods Ai has to create new documents and see if any of them work.
1. File > New
2. File > New, but with 'Use legacy "File New" interface' option enabled in Preferences > General
3. Creating a new document from an .ait template file (you can save any document as such a template, and then double-click it to create a new document based on it).
If you get any error message — please share a screenshot. -

Resolveu assim pra mim. Vá em editar/preferências/geral e marque a caixa de opção: - Use a interface anterior "Arquivo Novo".

Estou com a versão 25.3.1 (64bit) e não estou conseguindo criar um novo documento. Mesma situação ocorre com o Photoshop. Até dia 20 de julho (aproximadamente) estava normal.

I can open old documents but whenever I try to go to file-new it won't open

It is a work around but go to edit/preferences/general and check the box of (legacy" create new" format)

I did the 25.0 update this morning and I can't get illustrator to start a blank new document. When it opens the whole lower area is just grey. I can open old documents, but the "New Document" option literally does nothing.

Since updating my Illustrator to the 2021 version, the current version, and any other versions prior to it that I have reverted to have not been able to open new documents. When I launch the app, it opens the 'Welcome to Illustrator' window like normal, and I can open existing projects fine, but as soon as I go to 'Create New' or 'Templates', it won't open a new document window. The buttons don't seem to respond at all.
I've tried uninstalling Illustrator 2021 and re-installing, to no effect. I've installed the previous 2020 version, with the same bug where I can't open new documents. It's incredibly frustrating.The only way I can make a 'new' document is to open an existing document, resize the artboard and save as a copy.
THIS IS AN ISSUE ACROSS ILLUSTRATOR, INDESIGN AND PHOTOSHOP 2021.

This issue started as soon as Illustrator was updated to version 24.2, basically when working o a document, and you save it and close it, you try to create a new document, but there is no dialog for the new document.

Mac OS 10.14.3. I try to create a new document, several different ways. Each time I get an error message: An unknown error has occurred. I click okay to dismiss it and get the error again. I dismiss that and get an error that says : Can't create a new illustration. The command was cancelled.
This is not an idea, it's a bug.

How could it be that I can not make a new document?! I select and nothing happens. I have uninstalled and reinstalled the software. Using Windows 10, Abobe CC 2017. No phone or chat support available! Help! I pay and can't use. I pay so I can use...
